Chocolate fondant

Ingredients for 8 cupcakes:

200 gr. of dark chocolate
200 gr. of butter
125 gr. sugar
4 eggs
140 gr. of flour 00
20 gr. of bitter cocoa
5 gr. of baking powder

 

Directions:

Dissolve the dark chocolate with the butter in bain-marie (water bath), meanwhile mix the eggs with the sugar. Once obtained a homogeneous fluffy mixture add the flour, the cocoa and the yeast, all well sifted to avoid the formation of lumps. After that, it will be the time to incorporate the dark chocolate which was melted previously with the butter (it is important that it does not exceed 40°C or 104°F) until you get a lukewarm and smooth mixture. At this point, pour the mixture into 8 cups buttered and sprinkled with bitter cocoa. (about 100-110g. of compound)
Bake in a ventilated oven at 185°C or 365°F for 9 minutes.
