Squid spaghetti

Ingredients for 4 people:

350g. cherry tomatoes

1 kg. squid

1 clove of garlic

extra virgin oil and salt q.b.

Directions:

Grill the cherry tomatoes seasoned with some maldon salt…

Remove the skin from the tomatoes; in the meantime take a pan, pour the EVO, the clove of garlic and the squid’s heads chopped with a knife and cook them for a couple of minutes…

Then put the tomatoes in the pan  and stir the compote till you get a smooth sauce. Then, take a pot with salty water and bring it to the boil; cut the squid’s body like spaghetti as in the following pictures…

Pour the squid in the boiling water and cook them for a couple of minutes, then cool them in cold water with ice…

Once cooled, pour the squid in the sauce and stir them like spaghetti…

Once brought back to temperature, place in the dishes and garnish with some basil Leaves…
