How to make dry mother yeast

This is why today we will offer you an alternative way to store it.

Our method is really simple and fast; all you need is your yeast and some flour.


  • 100 g of sourdough
  • 100 g made with flour


After “refreshing” your mother yeast, decide how much you want to dehydrate and put it in a glass jar for a couple of hours. I put 100 g of it aside, but you can make the quantity you prefer.

Let it proving for a few hours now, until its volume is double. At this point we will be ready to start the dehydration process.

Move your yeast on the table and start breaking it up; once reduced to many small pieces, cover them with 100 g. of flour and we begin the process of fragmentation.

In this case you will have two possibilities:

  • for the real lovers, start rubbing in your hands the pieces of yeast mixed with flour until pulverise them… as in the video…
  • For those who do not like getting their hands dirty, you can always use a blender.

The main thing is however the final result, that is your yeast, mixed with the flour, is almost reduced to a powder…

At this point all you have to do is cover it with a dry cloth or sterile gauze and let it dry for a couple of days.
