Pan fried lamb cutlets!

Today we will prepare one of my favorite meat recipes… pan fried lamb chops! A very simple and tasty recipe, with just a few ingredients and few steps to follow, but at the same time very important for the perfect success of the dish.

Let’s see what are the ingredients you will need for 2 people:

  • 1 rack of lamb or 8 cutlets already cutted (possibly taken from your trusted butcher)
  • 100 g of butter
  • 1 branch of rosemary
  • 1 sprig of thyme
  • Salt and Pepper To Taste
  • 2 courgettes (maybe from your garden)


Let’s start by seasoning and massaging our ribs with salt and pepper as you prefer, while we heat a pan with a drizzle of oil.

Let’s make sure that the pan is hot when we put our meat on the fire as you can see in the video below…

This will serve to seal the meat and not lose all the juices that give it its taste. Depending on the thickness of your ribs, you will have to adjust the cooking time. I am a rear meat lover, so I let them cook for about 1 minute on one side and then turn immediately on the other…

Let them cook for a few minutes if you don’t like undercooked meat; once I turned, I immediately put the butter cut into small pieces in the pan with the herbs, letting the butter melt slowly.

And now a procedure not to be underestimated; when the butter has melted, tilt the pan slightly and with the help of a spoon “sprinkle repeatedly” the meat with the hot butter…

Now is time to plate it up; while we let the meat rest for 1 minute, we place our courgettes, previously cut and sautéed in a pan, in the center of the plate, where we will lay our ribs on them …

We have used courgettes this time, but the ribs also go well with a mashed potato in winter, our roasted potatoes or other vegetables.
