Roasted Potatoes

Ingredients for 2 people:

  • 500 g of new potatoes
  • 50 g of butter
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • Salt to taste.

Procedure:

Wash the potatoes vigorously under running cold water and then drain them in a colander. Now proceed to cut the size you prefer; I personally don’t like them too small, so in most cases I only cut them in half.

In the meantime, bring a pot full of water to the boil, which we will salt a few seconds before we drop the potatoes.

About cooking times, I can tell you that I always keep them between 10 and 15 minutes, but it really depends a lot on the size of the potatoes.

Once the potatoes are cooked, drain and cool in very cold water.

At this point we will use a non-stick pan with plenty of oil; heat it well and then start to put the potatoes on the peeled side, one by one starting from the outside board of the pan, and going towards the center.

This will allow you to have all the potatoes browned in the same way; a very important thing is not to move them until they have made the crust on the bottom.

At this point we can add the butter, salt and herbs and stir for a few minutes…

Your side dish is ready to accompany your meat or anything else you have prepared…
