[:en]”Refresh” your mother yeast[:it]”Rinfresco” del lievito madre[:]

[:en]Today we will see together how to refresh your mother yeast, a very simple but fundamental step to keep your yeast always active.

The ingredients you will need are:

  • 100 g sourdough
  • 50 g room temperature water
  • 100 g flour

Method:

Refreshing the mother yeast is really very simple; just remove it from the fridge and leave it for a couple of hours at room temperature.

After 2 hours, you can proceed to remove the crust that may have formed on the surface and we will only use the remaining part.

Then weigh the remaining quantity of sourdough and add half the weight of water. In my case I had 100 g. yeast and I added 50 g. of water; then dissolve everything until obtaining an almost homogeneous liquid…

Now we can move on to adding the flour, which must be the same weight of the yeast, therefore in my case 100 g.

Mix the flour well until it forms our dough again; at this point I will have obtained 250 g. of yeast that I will divide, keeping 100 g. in the refrigerator, while the remaining 150 g. I will use it to make some bread or focaccia.

I will then cut the 100 g with a razor blade and put it back in the refrigerator, making a cross cut, and I will put it back in my glass jar which I will have washed rigorously only with hot water, without soap.

I will then go to cover my glass jar with the cap, letting some air pass, and putting it back in the fridge.

The refreshment process should preferably be done every day, especially at the beginning, but there are no major problems if is every two days.

You must always use high-protein flours, I always keep on 13 g. so when buying your flour always pay attention to the amount of protein per 100 g. of product.

Protein is the part that will feed your yeast, so by using richer flours you can refresh your yeast even every 2 days without problems.

I am also using semi-wholemeal flour to refresh my yeast, and I must say that lately I have been preferring wholemeal or buckwheat flour.

Gli ingredienti che vi serviranno sono:

  • 100 g. lievito madre
  • 50 g. acqua a temperatura ambiente
  • 100 g. di farina

Procedimento:

Rinfrescare il lievito madre è davvero molto semplice; vi basterà toglierlo dal frigo e farlo stemperare per circa un paio di ore. Una volta trascorse le due ore, potrete procedere a rimuovere la crosticina che potrebbe essersi formata sulla superficie e andremo ad usare soltanto la restante parte.

Pesate quindi la quantità di lievito madre restante e aggiungete la metà del peso di acqua. Nel mio caso avevo 100 g. di lievito ed ho aggiunto 50 g. di acqua; sciogliamo quindi il tutto fino ad ottenere un liquido quasi omogeneo…

Ora possiamo passare ad aggiungere la farina, che dovrà essere lo stesso peso del lievito, quindi nel mio caso 100 g.

Amalgamare bene la farina fino a formare di nuovo il nostro panetto di lievito madre; a questo punto io avrò ottenuto 250 g. totali di lievito che andrò a suddividere, tenendone 100 g. in frigorifero da continuare a rinfrescare, mentre i restanti 150 g. li userò per impastare.

Andró quindi a incidere con una lametta i 100 g. da rimettere in frigorifero, eseguendo un taglio a croce, e lo rimetterò nel mio vasetto di vetro che avrò lavato rigorosamente solo con acqua calda, senza sapone.

Andró quindi a coprire il mio barattolino di vetro con il tappo, lasciando passare un po’ di aria, e rimettendolo in frigo.

Il procedimento del rinfresco va eseguito preferibilmente ogni giorno, specialmente all’inizio, ma non ci sono grandi problemi se anche dovessero passare due giorni tra un rinfresco e l’altro.

Bisogna usare sempre farine ricche di proteine, io mi tengo sempre sui 13 g. circa, quindi quando acquistate la vostra farina buttate sempre un occhio alla quantità di proteine per 100 g. di prodotto.

Le proteine sono la parte che nutrirá il vostro lievito, quindi usando farine piú ricche potrete rinfrescare il vostro lievito anche ogni 2 giorni senza problemi.

Io sto usando anche farina semi-integrale per rinfrescare il mio lievito, e devo dire che ultimamente sto preferendo di gran lunga farine integrali, o di grano saraceno.
